Za'atar Tofu Kebabs (Vegan)

As a busy nutrition coach and mum, my midweek dinners have to be fast, but I still want them to be high protein, nutritious and delicious too (for myself and the family). To tick those boxes every night I go for options that require very little prep, and very quick cooking time. I also love to use spice blends as these take the thinking out of things for me, plus there are so many tasty ones out there, why not?


I discovered za'atar on my travels and immediately picked up a bag to bring home in my suitcase. It's now a staple that I throw into everything, from omelettes to tray bakes! It pairs beautifully with the vibrant veg in my Za'atar Tofu Kebabs.

Serves 2

 

Za'atar Tofu Kebabs Ingredients

  • 60g wholegrain brown rice

  • 200g super firm tofu

  • 160g chestnut mushrooms

  • 2 medium sized courgettes (approx 280g total)

  • 1 large red bell pepper (approx 180g)

  • 1 medium sized aubergine (approx 240g)

  • 1 tsp (5ml) quality olive oil

  • 2 tsp za'atar spice

 

Method

1 - If you are using bamboo skewers (rather than metal ones), pre soak them in a shallow tray (an oven tray will do) to avoid the wood burning.


2 - Put the rice on to boil according to packet instructions.


3 - Wash the veg, setting aside the mushrooms as these will be skewered whole. Chop the tofu into eight chunky cubes. Then chop the bell pepper, courgette and aubergine into big chunks (remember they will shrink when grilled).


4 - Place the vegetables in a large bowl, drizzle over the oil and sprinkle the za'atar. At this point I like to firmly hold a dinner plate on top of the bowl and give it a good shake to ensure the veg and tofu is evenly coated.



5 - Alternate the different vegetable pieces with tofu, packing close together on the skewers to allow for shrinkage as they cook. Lay out on an oven tray and baste with any remaining seasoned oil from the mixing bowl.



6 - Grill in your oven or on the barbecue and serve with the rice.



This meal would pair nicely with a dollop of Greek yoghurt and a green salad (nutritional details below are for the rice and skewers only).
