BBQ Chicken Tortilla Pizza
We needn't pretend that tortilla pizza is a replacement for regular pizza - it's not, regular pizza is awesome - but having this as a lighter option may just suit your digestion better, or help toward your current goals.
I absolutely love pizza but by putting in the effort to make a homemade one, it's far easier to hit a high protein macro target. Better still, rather than making dough from scratch, a tortilla wrap pulled out the packet provides a quick solution for endless topping possibilities! This BBQ chicken version is super tasty, without a side serving of unwanted calories.
Serves 2
Ingredients
2 flour tortillas
1 white onion, diced
85g cooked chicken, shredded
50ml barbeque sauce
1 tsp balsamic vinegar
50g cherry tomatoes, sliced
100g mozzarella cheese, grated
50g Parmesan cheese, grated
Method
Begin by preheating your grill to a medium heat.
Place the tortillas under the grill for around 1 minute, or until they are lightly toasted all over (remember to watch the tortillas carefully as they will burn very easily).
Once cooked, remove from the grill and set aside.
To soften the onion, gently sauté in a pan for 5 minutes.
While the onion cooks, add the shredded chicken to a bowl and combine with the barbeque sauce and balsamic vinegar.
To assemble the pizza, spread the tortillas with barbeque sauce and scatter over the chicken, onions and tomatoes. Top with the grated mozzarella and Parmesan before placing the pizza under the grill once again.
Once the cheese has melted and is beginning to brown, remove the pizza from the oven and serve.
Tastes great with a big side salad!
